Pumpkin Bread

I found this recipe last year when a coworker of mine at Monster requested pumpkin bread for her birthday. Andrew loves it so much that when I asked him what he wanted for his birthday, this was his first thought (despite the fact that he's a chocolate lover). Knowing that I have a lot of baking to do next week, the actual week of the birthday, and that the bread freezes well, I ended up making it last night.

Here's how it looks:














Due to my 70's piece of crap oven, anything like bread that needs a lot of time in the oven gets a little burnt around the edges in order to cook all the way through. So ignore the corners and focus instead on how moist it looks!

A fall treat that is really simple to make.

Ingredients:

  • 3 1/4 cups all-purpose flour
  • 3 cups white sugar (yikes, I know!)
  • 2 teaspoons baking soda
  • 2 teaspoons pumpkin pie spice
  • 2 cups solid pack pumpkin puree
  • 1 cup vegetable oil
  • 1 1/2 teaspoons salt
  • 2 teaspoons ground cinnamon
  • 2/3 cup water
  • 4 eggs
  • 1 teaspoon vanilla
  1. Grease and flour three 7" x 3" loaf pans. Preheat oven to 350 degrees
  2. Measure flour, sugar, baking soda, salt and spices into large bowl. Stir to blend. Add pumpkin, water, oil, and eggs. Beat until well combine and pour batter into prepared pans.
  3. Bake for approximately 1 hour and voila!
