Fall means apple picking in New England

.....which inspires me to make all sorts of apple desserts, like this apple cake recipe from the Boston Globe:

















I wish these were pictures of something I made, but photos are courtesy of the Globe as well.

However, what I'm not so thrilled at is the thought of peeling all the apples necessary to make this dish. Unlike my Mom, whose one of those people who can wield a sharp knife and just have one long peel from the apple, I'm tend to waste a good 1/3 of the apple while peeling and cutting.
