Mint Chip Smacker

My contribution to the anniversary festivities, as usual, was an ice cream cake from Cabot's - As Andrew likes chocolate cake, and we both like mint chocolate chip ice cream, I picked a cake from their Candy Shoppe line:

The cake looked very impressive - luckily, I remembered to put it out to thaw while I was making dinner:

So it was easy to cut into and enjoy immediately when we were ready for dessert! And what the label doesn't mention is that there are little mint chocolate cups swirled throughout the ice cream as well:
